Slow Cooker Red Curry Beef Pot Roast

In this video, you’ll see how to make a beef pot roast with red curry in the slow cooker. This is what happens when you cross the flavors of Southeast Asia with the American Midwest. Extreme deliciousness. A little red curry paste, cumin, coconut milk, fish sauce, and coriander lay the flavor base for this slightly exotic comfort food. The meat cooks low and slow for about 8 hours until fork tender. To finish the dish, you’ll simmer potatoes and greens in the sauce before digging into this amazing one-pot dinner. Watch the video, then get the recipe for Chef John’s Slow Cooker Red Curry Beef Pot Roast. Top it off with crunchy roasted peanuts and chopped fresh cilantro.

This was a big hit for supper tonight. Used chili powder with cayenne instead of the red thai, used 1 large sweet potato chopped and frozen peas as the veg add in. Delicious!! Thanks Chef John, you're my go-to guy on allrecipes.

I'm looking forward to cool weather & trying out this recipe.

Think I'm going to try this, but substitute large cubes of sweet potato and Japanese eggplant (or broccoli) for the small potatoes and bok choy. I will also more than double the amount of red curry paste, since I like it spicy!
