I'm Vietnamese and I love making this at home as a main dish. This is one of the ways to make my children eat vegetables. My version is this. I'd dip my rice paper in warm water for faster soften up. I don't have to chop up my herbs and salad/lettuce because it'd fall off as I dip. I sometimes use bean sprouts, shredded granny smith apple, or any veggies available. I can roll with boiled shrimp and boiled pork (thin slices), thin sliced beef stirred fried with butter, or baked fish. For Hoisin dipping sauce, I'd boil up 1 Tbsp of Hoisin sauce with 1 Tbsp of peanut butter, and 3 Tbsp of water for dipping sauce. For dipping fish sauce, I'd boil 1 Tbsp of fish sauce, 1 Tbsp of sugar, 1/2 Tbsp of vinegar, 3 Tbsp of water, some chopped garlic, and some chopped pepper (optional, because my children don't eat spicy hot.) I can make the dipping sauces ahead of time and keep in my refrigerator for a month.

I make something similar but with bbq pork and fresh mint. Very yummy as I do not like shrimp.
