Porcupine Meatballs

In this Kid-Friendly Cooking video, you’ll see how to create tasty “porcupine” meatballs. Kids love helping squish together the ground beef and seasonings with the rice that, when cooked, becomes yummy little “porcupine spikes” sticking out of the meatballs. This is as much fun to make as it is to eat. And it’s a lot of fun to eat! Get the recipe for Tara’s Porcupines.

I would have liked to have seen a close up of the spikes. I couldn't see any spikes in this video.

Good to see kids becoming reacquainted with “porcupine” meatballs. I'm 66, and I remember my mom making these when I was a kid too. Her recipe came from an old Mirro pressure cooker (forerunner to slow cookers and exactly the opposite! Pressure cookers cook everything very quickly). I'm sure there are many versions, but one thing's for and adults alike love this fun & easy-to-fix meal! Thanks for the trip down memory lane!
