This is my favorite shrimp recipe. I like this even better than Shrimp Scampi. The onions bring out the flavor of the shrimps. The shrimp flavor isn't lost in the garlic like with shrimp scampi, though I still enjoy shrimp scampi from time to time. Also, I like my grits plainer, cooked with just water, salt, and a little black pepper.

with 15 minutes of cook time, the shrimp will be a bit over cooked.

I apologize in advance. This is not an authentic recipe of Low Country better yet Charleston Shrimp and grits. At best this is a mere adaptation. To be fair I've tried this version of the dish and have enjoyed it. When I tried it the first time I was taken aback by the fact it was advertised as shrimp and grits. Authentic low country shrimp and grits involves skillet/pan gravy, bacon and a few other staples. Additionally the Shrimp is not combined with the grits. One day I'll write out the recipe I learned as a girl and share it. Good version but not low country shrimp and grits. Sorry.
