Cheesy Acorn Squash

For the filling, I used a packet of Seeds of Change quinoa/rice mix. It can be heated in the microwave or on the stove. I cooked it in a saucepan with diced leek, diced onion, some Swanson vegetable broth to moisten and seasoning to taste. Just guesstimated it and heated through while the squash was cooking in the microwave. I had two squash that needed to be prepared and the filling was enough for the four halves. Used grated sharp cheddar for the cheese. It was delicious, and the leftovers heated well the next day- I think it tasted even better than day one!

I added 4 slices of bacon and some thyme and it was excellent. I also drizzled the squash with some olive oil and a pinch salt and pepper and baked it in the oven before I stuffed it.

I think some diced bacon or ham mixed in would/could make it a meal.
