One note about the use of Albacore vs Chunk Light Tuna. I am not an expert but I have read more than once that Albacore is from a more mature larger tuna and therefore has higher content of mercury and other toxins from the water. The younger tuna has not absorbed as much. Now, if you disagree, feel free to post, but don't shoot the messenger. I'm just sharing what I have read and heard.
