My Mom made this for us as Kids. She did not use Mayo in the spinach mix. Only Feta, a little saute'd onion finely chopped and garlic. She then seasoned and poured over cream, thyme and a little chicken stock. After half baking time, she would pour over a slight drizzle of Olive oil and remove foil for remaining time in oven. Sizzling and tender and delicious.!!! The Mayo also puts me off a little.. N

Dan, Your suggestion of browning seemed like a good way to this off to a good start. Did you brown the chicken with the bacon on? And, did the stuffing stay put?

of course this will be bland, it's not seasoned! Salt, pepper, olive oil...
