Made these tonight. I adjusted the breadcrumbs to 1.5 cups with the half cup of parmesan as I had a smallish eggplant but still ended up with quite a surplus of crumb mixture. Instead of dipping and breading all the slices at once, I prepared a batch, started frying and then went on to the next batch. First batch I tried olive oil but it was definitely better with the canola. They are good as is but I put a fresh tomoto slice on some pieces, sprinkling pepper on top. Am going to try the variation of adding a tomato based sauce, topping with mozzerella then putting them in the oven to melt the cheese - think this will be a great vegetarian option to chicken parmesan. Thanks for an awsesome experience with my first time cooking eggplant.

I found the trick to most all recipes. Add salt. If you don't have salt, add some sodium. Especially if you have high blood pressure like I do.
