Right on about the steaming to make the crusty crust. Just throw 5 or 6 ice cubes into the pre-heated oven when you first place the dough in to bake. They will put steam into your oven quickly at just the right time for your rolls or loaves! I am a chef/pastry chef and have been baking breads at home and in commercial kitchens for over 30 years! Commercial ovens often have steam injection for French and Sour dough loaves that help to give the crustiness as well as color to your bread. The ice cube method works at home very well. Thanks for the great video! However, with French bread you need to steam your bread while baking it. This will give the bread a hard,crunchy exterior while keeping the interior soft. This is what makes bread French bread. :)
