great chicken, made a few changes.....sub. cumin for cloves and added a bit of paprika and crushed red pepper. ... made the chicken more brown and golden....also added 2 stalk celery to cavity.....will make again and again....also I tented loosely with foil to help keep splaters down and still comes out crisp and brown

To hannahclan: she said chimmichuri sauce. But I don't know, maybe cherry sauce would be good too!

I have found that air-drying the chicken on a plate uncovered in the refrigerator for 24 hours gives a much crispier skin.
