I made this as directed and was very rich and delicious; however, I will try the lighter version. It was amazing with shrimp, possible just about anything I would imagine.

You can make this considerably less "rich" by using milk instead of heavy cream and considerably less butter. Thicken the sauce by making a roux. Melt 2 Tbsp of butter in a warm saucepan over med-low heat. Add 2 Tbsp flour and stir to form a roux. Continue stirring for about 1 min. Add some fresh crushed garlic at this point. Add milk 1/4 cup at a time stirring each time until warm and bubbly. Once the sauce reaches the consistency you want, turn off the heat and stir in the parmigiano reggiano. Remember, the addition of the cheese and natural cooling of the sauce will thicken it further. This method will work with whole milk, 2%, 1% or even skim milk. and to MYLOU: YES! YES! Fettucini Alfredo with shrimp is absolutely amazing.
