Chef John, What happened to the rice. I have never seen the meatballs made without adding rice to the meat, then forming them?

My wife is allergic to beef so I'm going to try this recipe using ground turkey and ground pork. I'll be using chicken broth for the gravy. I'll follow-up to let everyone know how it turned out.
