White Bean Chicken Breast Chili

In this video, you’ll see how to make white bean chili using chicken breast meat. The trick here is to cook the chicken breasts in just a small amount of vegetable oil, leaving behind the flavorful browned chicken bits, and then deglaze the pan. You can use chicken thighs here, too, but chicken breasts have less fat; and this chili is so flavorful with garlic, ancho and chipotle chili powders, cayenne, cumin, and oregano, you won’t miss the fat. Loved it. Quick and easy. Done in about an hour. I would double next time for leftovers!

Excellent recipe. Thank you so much for sharing. Rarely follow recipes exactly as rarely agree, but this one was spot on. I added sliced carrots and pablano peppers, lime wedges and stirred in few teaspoons of fat-free sour cream. It was a super fast mid-week meal, easy to make, and provided todays leftovers for lunch. None left....delicious. Served with fresh ciabatta bread, but imagine toasted tortilla chips would be good too. I eat nothing fried, so bake / toast tortilla chips.
