this is a very good recipe. By chance, I changed grated carrots to grated pumpkin (not cooked), and turned out perfectly too. I also add a bit of ginger and nutmeg in addition to cinnamon to make it a bit more spicy. And a bit of lemon juice to cream cheese frosting to add a bit of zing to frosting (in contrast with the sweet cake). Goes perfectly with freshly brewed coffee.
