I know this is to make it as easy as possible but I prefer using a whole chicken to get the nutrients. Basically, the same recipe but I also add a cup of diced potatoes and I use a 13x9 pan and more broth and half and half because I like lots of filling! I don't like a dry pot pie. (all my veggies are one cup each)

Potatoes, potatoes, potatoes! Gotta have potatoes in chicken pot pie! Some have mentioned frozen vegetables, but the recipe stated 'from scratch', thus the chopping and sauteing of the vegetables. Plus, that way, you can add just what your family likes. Like potatoes.....

I wish comments had a like or dislike button plus a comment. Some comments I would like to comment on, like Mama Hollis. Like her, I never add anything to raw meat until it's finished cooking. and to Lpfowlie -- mini pot pies are made the same way as regular. For the crusts, you can just roll out a Pillsbury dinner roll and put it on top of the other ingredients.
