I pour the marinade into the cup side to start with, then flip to wet the smooth part. When I removed the gills, the flavor was less mushroomy. we like the flavor with the gills -- of course, they have to be fresh, if they are slimey, then they would not taste good. In a pinch, we just toss them in any kind of vinaigrette. We sometimes grill slices of onion and stack them. Grilled green tomatoes or sweet peppers also is a great variation.

I made the recipe as is and only used a different sauce on top. It is one of the best recipes I've even made!!!

She did not remove the gills in the mushrooms. If not removed they will give a muddy taste to the preparation.
