This video is missing an important and if left out potentially dangerous step. Once Turkey is rinsed it is absolutely essential that you completely dry it before immersing the bird into the hot oil. If the bird is wet when immersed then the oil will spit violently, this could cause you to drop the bird into the oil producing overflow and potentially causing a fire. ALWAYS MAKE SURE YOUR BIRD IS DRY BEFORE HOT OIL IMMERSION.
