If you haven't tried the recipe, then you really shouldn't judge. You don't know every person's limitations. What's easy for you may not be easy for another. Also, as with any recipe, you can adjust the seasonings to suit your taste. If you object to canned food, you can use the following substitutions: 1 can corn = ~2 cups fresh or frozen corn 1 can black beans = ~2 cups cooked black beans 2 cans broth = 3.5 cups broth 1 can cubed chicken = 1 boneless chicken breast, diced Unless you live in a dry-hot climate, there is really no fresh substitute for Rotel. Canned tomatoes are generally far superior to fresh tomatoes when tomatoes are out of season. For most of the world, tomato season only lasts for a short period during the year.
