I chopped and sauteed a regular onion since I had that on hand. I also used the frozen veggies with peas, carrots, corn and green beans. The green beans were not that great, but the other was. This was very easy and the hubby loved it. That's all I care about.

I sauteed mushrooms, red pepper, carrots, minced garlic, celery and green onion in olive oil, a little butter and soy sauce, seasoned with a little ginger...added 2 pints of leftover "chinese restaurant" rice, added more soy sauce and oil, scrambled up 2 eggs in all of it and heated thoroughly.....delicious!!!!!
