This is great, nice recipe. Another variation is to use homemade seitan (basic seitan = 1 1/3 Cup vital gluten combined with 1 Cup water, let rest about an hour, gently boil 45 minutes, cool and carry on),pulse it in a food processor until it reaches the size you want your 'ground' meat to be (some throat cancer survivors find larger crumbles harder to swallow).

OMG!! This recipe is so good. I took another members advice and used cumin and cilantro instead of parsley. Instead of textured vegetable protein I used diced portabello mushrooms.
