I read that it should be rinsed, drained and dry, then toasted in a skillet for about 5 minutes over medium-low heat to bring out a very nutty flavor.

Quinoa MUST BE RINSED before cooking. If you don't rinse it, it will taste like soap. How can directions for cooking quinoa from a recipe website fail to include this crucial information? Sheesh. Anyway, swish it around in some water and drain in a fine mesh sieve.

Quinoa should be rinsed real well before cooking to avoid it tasting bitter once it is cooked. It can be cooked and used exactly how rice is once it is rinsed.
