The Farmer’s Frittata

Gorgeous fresh garden vegetables, cheese, and a touch of bacon make this easy frittata a delicious choice for any meal of the day! Chopped zucchini and summer squash get tossed with kosher salt so it can "cure"... this pulls out the bitterness and makes the squash taste sweeter. After it cures, it gets rinsed well and drained while the rest of the veggies get cooked. One slice of bacon adds savory flavor to the peppers and onions, which are then mixed in with the drained zucchini. A mixture of sharp, aged Cheddar and eggs gets poured into the skillet and cooked just until it starts to thicken up. Chunks of creamy goat cheese get scattered on top and a 2 to 3 minute stint under the broiler is all that's left before you can enjoy this delicious Italian-style omelet!
