I have been making these for years, I make them smaller(who really needs all that fat in half a lb. of meat). I use lawery salt and freshly gr. pepp.. I also use reg. size buns. I love Chef John to death but wonder why he drags his words kind of like a Valley Girl.

Sounds great. I would use garlic powder instead of salt. Also add some chopped spinach red/green bell peppers to the hamburger before cooking and grilled onions on toasted bun.
