To prepare Chef John's Strawberry Dream recipe, we'll start by mixing strawberries and sugar and letting them macerate for at least an hour, to bring out the sweet juices. An immersion blender transforms them into a smooth puree and that can sit in the fridge until needed. Next, we'll bring some sugar and heavy cream to a boil, and simmer it for 5 minutes. After we whisk in fresh lemon juice, vanilla, and some of the chilled strawberry puree, we'll set it aside to cool. The rest of the strawberry puree gets divided between 4 dessert glasses and the chilled cream mixture goes on top of that. After that chills to a pudding-like consistency in the fridge for several hours, we'll top it with more sweet, juicy, macerated strawberries and serve to our guests.
