Chef John's Milk Bread

Mixing up and cooking a starter "roux" out of flour, water, and milk is the key to this milk bread recipe, and our very first step. Once the roux thickens up we'll let it cool to room temperature, before mixing it with the other bread ingredients until smooth and elastic. Then it will double in size in a greased bowl for about 1 1/2 hours before we shape it into a rectangle, roll it up, and pop in a generously greased bread pan for about 40 minutes.
