Greek Chicken and Potato Bowl

To make Chef John's Big Fat Greek Salad even bigger, we add crunchy potatoes and marinated, roasted chicken. We start by marinating chicken thighs in a lemon juice and herb mixture for at least 6 hours. These get roasted together on a baking sheet with diced potatoes while a zesty oil, vinegar, and lemon juice dressing is whisked up. Cucumbers, tomatoes, onions, feta, and our roasted chicken and potatoes are tossed together with the dressing to complete these Greek-inspired bowls. Yum!
