Classic Cheese Fondue

Making Chef John's classic cheese fondue is so easy! Start out by heating some white wine, cherry brandy, spices, and a bit of cornstarch over medium heat. You'll want to whisk occasionally as the mixture thickens slightly. Then you'll add handfuls of Gruyere and Emmentaler cheese into the pot, whisking after each handful until the all cheese has melted. A little more whisking will give you a super smooth cheese sauce can be transferred right into your fondue pot.
