Whole Shrimp Potstickers
The first step in making these tasty whole shrimp potstickers is to prepare the dough. Mix your flour, salt, and hot water into a shaggy dough and then knead it until smooth and elastic. Set it aside for an hour to rest while you prepare the shrimp filling. Combine whole, large shrimp with a flavorful mixture of scallions, garlic, sesame oil, soy sauce, and a bit of Sriracha and let marinate for 30 minutes. At this point you can prepare your dipping sauce by mixing rice vinegar, soy, chile sauce, and green onions. Give that a quick stir and set it aside until your dumplings are ready. Roll dough into small circles and fill each with a shrimp and some of the marinade. Fold the ends up to seal and crimp lightly. Fry dumplings, 6 at a time, in a lightly oiled pan until crispy.
