Chef John's Hot and Sour Soup
Skip getting takeout and prepare Chef John's version of this favorite soup at home! We soak our dried shiitake mushrooms to soften them while we whisk up a soy sauce, rice vinegar, sesame oil, and white pepper blend--the key to the "hot and sour" flavor! Our softened mushrooms get simmered in chicken broth with a variety of other vegetables, tofu, and our hot and sour mixture for 5 minutes. We bring it up to a boil and pour in beaten eggs while stirring to give it an "egg drop" boost. A cornstarch slurry is added to thicken it up before it gets served up with sliced green onions.
