The first step in making these fancy Florentine lace cookies is to finely chop the almonds in a food processor until crumblike. Then butter, brown sugar, and honey are combined in a saucepan, melted, and brought to boil. After removing from the heat and stirring in some vanilla, salt, and flour, we'll add the chopped almonds and mix until completely combined. Patience is the name of the game as we bake just 8 cookies at a time, allowing them to spread out and get nice and golden brown with slightly darker edges. After pulling the silicone baking liner off the cookie sheet and letting it cool directly on the counter for a few minutes, we'll start to sandwich the flat edges of these cookies together with melted chocolate.
