Chef John's Gingerbread Biscotti
For a delicious holiday cookie recipe that’s a lot easier than making a gingerbread house, these sweet and spicy gingerbread biscotti are simple to make! Start out by mixing and setting aside your dry ingredients. Then mix softened butter, brown sugar, and molasses into a super smooth and creamy paste. Add in the eggs, one at a time, and then vanilla and the carefully chopped crystallized ginger until evenly distributed. Mix in your flour in two additions to form a very soft, sticky dough, form it into a log, and refrigerate it until firm. Once the dough is baked, let it rest for a bit, then slice it into biscotti and return the oven to bake until dry and crisp. Cool these to room temperature, and they'll get even crispier!
