Classic Green Beans au Gratin

Give your family a new holiday tradition with Chef John’s classic green bean au gratin casserole. Start out by cleaning and trimming fresh green beans and then boiling them in a large pot of salted water until just barely tender. Transfer them into a bowl of cold tap water to stop the cooking process, then drain and layer in a buttered casserole dish. Season with a little salt, pepper, and a touch of Dijon mustard, then pour heavy cream on top and sprinkle with Comte and Parmigiano-Reggiano cheeses. Mix up an easy “au gratin” topping of melted butter and bread crumbs and add that as the finishing touch.
