Chef John's Cloud Eggs

Fluffy, puffy cloud eggs are as easy to make as they are fun to look at! After separating egg whites from their yolks and placing each in separate bowls, the whites get whisked with vinegar and salt until relatively firm peaks form. These get transferred to a buttered, silicone-lined baking sheet where we shape and perfect them, leaving slight indentions for our yolks to go. Then, it's baking time! Bake these fluffy egg whites until they take on some color, then spoon the reserved yolks on each.
