Chef John's Sweet Potato Gnocchi

Tender gnocchi starts with cooking a sweet potato in a microwave or oven until soft, scooping out the flesh, and mixing it together with ricotta, egg, salt, cayenne, and flour. This dough gets portioned into eight 1/2-inch thick ropes that are cut with a bench press into gnocchi-sized bites. While we let our gnocchi dry, a savory bacon-butter sauce is simmered on the stove with rosemary.
