Italian White Bean and Sausage Stew
We start this comforting stew by soaking dry cannellini beans in cool water overnight. When ready to start cooking, we remove the casings from Italian sausage with fennel and garlic, and brown it in a dry pot until it creates a fond. After adding the onions and cooking them in the rendered fat, we deglaze the pot with wine, add spices, water, and the beans. Once the mixture comes to a boil, we'll let the beans cook until tender, adding salt along the way, and then mashing some of them to give the stew a creamy texture. The last step is to add your choice of greens and let them simmer until tender before ladling it into bowls and topping it with olive oil, cheese, and red pepper flakes.
