Mbeju (Paraguayan Cheese Flatbread)

Made with few ingredients, this gluten-free, snackable bread starts off with mixing cassava flour, salt, cayenne, butter, and Cheddar together and pouring in milk slowly until it looks like small pebbles and is moist enough to hold together. One by one the soon-to-be flatbreads get pan-fried in a dry skillet over medium-high heat until a browned crust forms on both sides--which takes less than 10 minutes per flatbread! Enjoy these golden goodies plain, with melted butter and a coffee, or layer with avocado, peppers, onion, and chipotle mayo--the possibilities are endless.
