Easy and Delicious Purple Yam (Ube) Cookies
A simple recipe for purple yam cookies. These taste awesome! They're very soft and cake-like in texture. These are dome-shaped once they bake. You can flatten them as desired. This is a flexible recipe. You can add a teaspoon (or more) of baking soda instead of baking powder if you want a thinner cookie. I think you can top these with some white chocolate chips after baking.

This simple, nourishing stew of tripe and vegetables is found in innumerable variations throughout Latin America and around the Caribbean. On the islands of Aruba and Curaçao, it is known as sopi mondongo. Cooking Puerto Rican food is a bit similar to Island and Spain cuisine; it has a distinctive flavor combined with foreign influences using native seasonings and ingredients. Serve in deep bowls with white rice and avocados.
My husband never liked yams until I served them to him this way. The yams create their own glaze on the grill. You can add more herbs and spices to suit your own taste.
Hot Ube Pandesal (Filipino Purple Yam Bread Rolls)
What I'm sharing here is my version of the hot pandesal we ate for breakfast as kids and even for merienda (snack time), with hot chocolate or warm milk. I love food with ube flavor thus incorporating it with my favorite breakfast bread. I know there are many pan de sal recipes online but hope you give this a try and let me know what you think. Slow-Roasted Winter Vegetables
This is a mixture my husband came up with using what we had on hand in the fall, and it became a favorite. The first effort for these slow-roasted vegetables was on the BBQ, but it works just as well in the oven. Tastes even better re-heated, and makes great addition to soups and pot pies.
