High Fiber Bread
This dense, chewy bread has a good dose of fiber and is great toasted in the morning with my oatmeal.
Gluten-Free Hot Breakfast Cereal
This is a whole grain blend of 8 gluten free grains and seeds which are ground in a coffee grinder and cooked. Since going gluten and casein free I have been unable to find any hot breakfast cereals that we enjoy. So I created this one and the whole family loves it. Serve with brown sugar, agave nectar, honey or fruit.

Give your soups, salads, yogurt, and avocado toast a crunchy, nutritional boost with this easy medley of roasted seeds. They're great to just snack on as well! Make sure all the seeds are raw, otherwise they'll burn during the cooking process.

Sun Dried Tomato and Asiago Cheese Bread
Tomato and cheese healthful, low-fat bread for the bread machine. You may substitute wheat bran for the amaranth flour if you wish.
These pancakes were developed to be dairy- and gluten-free. The slight crunch of amaranth makes these memorably delicious! Soy milk can be substituted for almond milk if desired.
Gluten Free Gingerbread Drops
These pinto bean cookies use a small amount of rice flour and small amount of amaranth for grains. These are not overly sweet cookies, since molasses and raisins are the only sweeteners.
Artisan No-Knead Bread with Amaranth
This was my first time baking with amaranth and I am totally sold on its nutty flavor. I prefer baking no-knead breads in a Dutch oven, mostly cause it's so easy and produces a great crust! This recipe makes one large loaf, which I usually cut in the middle to freeze half.
