Cast Iron Skillet Buttermilk Cornbread
This recipe is for those people that do not like sweet cornbread. For me, this is my comfort food and what I grew up on.
Grandma's Iron Skillet Apple Pie
This three-layer apple pie is a Southern favorite!
Spotted Dog Irish Bread
This is my family's traditional St. Patrick's Day bread. My grandmother has had this recipe for longer than I've been alive. I was SHOCKED to find out this wasn't real Irish Soda Bread, but instead more commonly known as Spotted Dog. Whatever you call it, it is unbeatable topped with a bit of butter.
Hangtown Fry with Parmesan and Fresh Herbs
My variation on the traditional Hangtown Fry contains cheese and fresh herbs and is finished under the broiler where the egg/oyster mixture puffs up like a cross between a frittata and a souffle. I get the best results using a cast iron skillet. It's important that the oven be hot before you place the skillet under the broiler.
Cast Iron Buttermilk Biscuits
Experimentation and a need for more biscuits per batch led me to what we think are the best biscuits anywhere! For optimum flavor, these must be baked in hot, buttered cast iron skillets. They are great for breakfast with gravy or jellies. Also excellent with beef stew for dinner. My husband likes the leftover biscuits even better. He breaks them open on a plate and smothers them with molasses.
Pork Tenderloin alla Napoli
If you like the robust flavor of olives, tomatoes, and rosemary, this is the dish for you. I find it works best using a cast iron skillet.
Corn Tortillas
This is the real thing! A simple mixture of masa harina and water results in the most wonderful corn tortillas you ever tasted. The secret is to use a cast iron pan! You can buy masa harina at Mexican grocery stores or in the ethnic food aisle of large supermarkets.
Cast-Iron Skillet Prime Rib Roast and Gravy
Use your cast-iron skillet to sear a juicy beef standing rib roast, then cook the roast to perfection and make a savory red wine gravy all in the same pan.
