Shiitake and Baby Bella Mushroom Risotto

This risotto is extremely good. I like using fresh shiitakes because they give the rice a nice texture.

Homemade Cereal

My mother-in-law has made this wonderful granola cereal recipe for years. It's so flexible, and so much cheaper (and better) than the store-bought granola.

Vegetarian Bibimbap

Rating: Unrated
I created this recipe from looking at a few different ones online and choosing my favorite aspects of each. This is vegetarian but there are many bibimbap recipes with beef or chicken marinades, if you want to add beef or chicken to this dish.

Foreign Devil Fried Rice

Rating: Unrated
My husband is Chinese and I am Western. Between the two of us we came up with this recipe for fried rice that is actually a meal in a bowl. Now all my Chinese relatives make it this way and our Western friends have asked us to teach them how it is made. Optional ingredients include meat, salted fermented black beans, cashews and chili oil. I can do this dish in well under half an hour, and that includes all the chopping. This dish is good for colds, depression, writer's block, stubbed toes, insomnia, heartbreak, religious crises and general crankiness. It can change your life. Yum.

Asparagus Cashew Rice Pilaf

Rating: Unrated
This is an adaptation of an old Armenian recipe, and this variation is so delicious I can't stop eating it. It's a great way to stretch expensive seasonal asparagus and pricey cashews. It's great as a side dish or as a vegetarian entree.

Emerald Green Risotto

Rating: Unrated
My husband and I love risotto, but also prefer to eat healthily, so we came up with this compromise between the two. We use homemade stock to keep the fat and salt down. This recipe can easily be made vegetarian or vegan by using veggie stock and leaving out the cheese.

Brown Rice, Broccoli, Cheese and Walnut Surprise

This recipe was born one night when I didn't have too much to do. I guess the only surprise about it is that it tastes so good!

A good use for leftover rice. Can be served hot or cold.

Easy and good dish for potlucks. The pine nuts make all the difference! The mushrooms are optional. Garnish with fresh parsley.

Mexican Rice Pilaf

This is a nice, spicy rice dish.

Stir Fried Sesame Vegetables with Rice

Rating: Unrated
In this dish, the peanut oil is preferable to the vegetable oil, as the flavor of the peanut oil adds a really nice nutty flavor.

Zucchini Risotto

Rating: Unrated
This creamy main dish gets a splash of color with the addition of zucchini, sun-dried tomatoes, and basil. With much less butter than in a typical risotto recipe and no wine, there's no running around for ingredients you don't have on hand! The result is a lovely, light flavor in a very filling meal.

Quick and Easy Stuffed Peppers

Rating: Unrated
This microwave recipe is quick and very simple, and is a good meal for a busy work week. You can use any color peppers you like. Try using garbanzos instead of the kidney beans for a variation on this recipe.

This vegetarian dish is so filling, and I love it because its incredibly versatile. You can add whatever spices and vegetables you like!
