Hummus from Scratch
This is a great recipe made from dried garbanzo beans and soy beans. I cook my beans in a pressure cooker for an hour in a half water, half stock solution, but the old 'soak the beans overnight and simmer for two hours' method would also work.

Ok, this is my go-to recipe for those skeptics who say vegan can't be fun and flavorful! Oh yeah ... it fools them every time! Yup, even my East Coast/Italian friends! (You know who you are)! Perfect for a potluck, generous enough for a family dinner (maybe even leftovers)! Serve with salad and crusty bread! No one will know it's not ricotta! Get crazy and experiment with other veggies in the tofu mixture like mushrooms, zucchini, peppers, swiss chard, etc. for added flavor and vitamins.
Garlic Teriyaki Edamame
One of my favorite sushi restaurants had this yummy edamame dish, so I tried to duplicate it at home. I think I came pretty close.
These delicious baked wontons are filled with an edamame (soy bean) stuffing and are sure to please! For a dipping sauce, I recommend spicy Chinese-style hot mustard, teriyaki sauce, or my personal favorite, Kraft™ Asian Toasted Sesame salad dressing.
These are inspired by a dim sum item I had from a fancy Asian-fusion restaurant in Manhattan. They're delicious served with a simple broth and have a silky, savory edamame filling inside. They are time consuming, but relatively easy to make. You can make them ahead of time and freeze them for future use. The dumplings are meant to be steamed or boiled but taste great deep fried as well. Garnish with sesame oil, sesame seeds, and sliced green onion.
