This is a Charleston, South Carolina recipe. It is a combination of all the best recipes I have seen, and similar to a dish that is served in a popular Downtown Charleston restaurant.
Ginger's Shrimp and Grits
This a casserole-type shrimp and grits, which is how it is served at my favorite restaurant, where the shrimp and grits are served in an individual stoneware dish, topped with cheese, and baked until melted and crusty. The cheese grits are a variation of a recipe of a good friend, which are so scrumptious it will make you beg and howl for more! This recipe would be just as good using white cheddar.
Shrimp over Cheese Grits
Shrimp is sauteed with peppers and sweet onion, and served over a pile of hot cheese grits. I had a variation of this at a local restaurant, added a few things, and made it mine! Garlic bread makes a great side! be sure to have Tabasco on hand to add appropriate spice.
