Ex-Girlfriend's Mom's Salsa Fresca (Pico de Gallo)

My ex's mom had the best hand-chopped salsa fresca I have ever tasted back in college. Over the years, I have tweaked it to something my friends and family rave about. The trick for this salsa is marinating the onions and jalapenos in lime juice for about 5 minutes before adding the tomatoes and cilantro. There are two tricks to this recipe: 1. Hand-chop everything. It takes a while, but it is worth it. 2. The marinating is what makes this salsa special. Hope you enjoy.

Behold the best mashup ever, the croissant taco! Fine masa harina in the croissant dough results in flaky layers with a chewy interior. They're dense on the inside -- the better to hold the fillings -- but if you prefer a more tender, croissant-type texture, decrease the masa, increase the bread flour, and omit the gluten. I've also included lard in the dough, but feel free to use all butter. These don't keep well, so plan to eat them all on the day you make them.

Vendors sold grilled corn on the cob prepared with butter, mayonnaise, cotija cheese, chile powder and a lime wedge. They were so delicious! After moving, we'd crave this corn, so I altered the recipe using canned corn and mixed in the same ingredients for a similar treat that doesn't require an outdoor grill.
