Mac and 'Shews (Vegan Mac and Cheese)
Cashews are basically vegan dairy. Blend them with a little liquid and you've got a smooth cream, similar to half-and-half. Mixed with broth, nutritional yeast, miso and seasonings along with the macaroni and you've got delish mac 'n cheese.
Pasta with Gorgonzola Sauce and Radicchio
This rich and flavorful sauce is the perfect match for bitter radicchio. It is incredibly easy to make and goes well with any type of (preferably fresh) pasta. My favorite pasta to have this with is gnocchi. The light and fluffy potato pasta goes well with the rich sauce. Garnish with Parmesan cheese and parsley.
Whole-Family Pasta with Broccoli and Cauliflower
Many children, especially picky eaters, love pasta loaded with plain butter--a dish that clearly earns low marks on the health scale. This great alternative adds fiber and protein with beans, which kids actually love!
T's Smoky Noodle Bowl
Awesome smoky noodle bowl. You will be drinking the broth when the noodles are all gone.
Sichuan (Szechuan) Cold Noodle
Sichuan (Szechuan) cold noodle is one of the most famous Sichuan street foods. What I mean by street food is that you can get it almost anywhere in Sichuan--even a small food stand on the side of the street. It is actually simple to make, and the ingredients are easy to find. It is definitely a quick, easy meal, though you might want to watch out for the garlic. This noodle dish is better served right away. It does not taste as good if you leave it overnight and take it for lunch.
Spaghetti alla Carbonara: the Traditional Italian Recipe
This dish was created in the Lazio region (the area around Rome) in the middle of the 20th century, after World War Two. We don't use cream, milk, garlic, onions or other strange ingredients; we use only guanciale, eggs, pecorino cheese, and lots of black pepper (carbonaro is the Italian for coal miner). This isn't the Italian-American version, it's the real, creamy carbonara and it comes right from Italy, where I live. Buon appetito.
Summer Bounty 'Pasta'
This is a quick dish using fresh produce. Serve hot with some crusty bread for a delicious end-of-summer meal that's ready in minutes.
Greek Pasta with Tomatoes and White Beans
An easy, quick, and tasty recipe. The flavors are wonderfully different as they are combined and meld together.
For a simple, savory dish cook chopped onions in olive oil and ready-made pesto. Toss with hot pasta and grated Parmesan cheese, then serve up hot or cold. Either way it's deliciously easy!
