What I mean by street food is that you can get it almost anywhere in Sichuan--even a small food stand on the side of the street. It is actually simple to make, and the ingredients are easy to find. It is definitely a quick, easy meal, though you might want to watch out for the garlic. This noodle dish is better served right away. It does not taste as good if you leave it overnight and take it for lunch.

This dish was created in the Lazio region (the area around Rome) in the middle of the 20th century, after World War Two. We don't use cream, milk, garlic, onions or other strange ingredients; we use only guanciale, eggs, pecorino cheese, and lots of black pepper (carbonaro is the Italian for coal miner). This isn't the Italian-American version, it's the real, creamy carbonara and it comes right from Italy, where I live. Buon appetito.
