  1. Preheat oven to 325 degrees F (160 degrees C). Grease a 9x13 inch baking pan.
  2. In a small saucepan, combine sugar, carrots, spices, raisins, water, orange juice and butter. Bring to a boil, reduce heat and simmer for 5 minutes. Pour mixture into a large bowl and cool to lukewarm. Add flour, baking soda, and salt to the carrot mixture. Mix well, and stir in walnuts.
  3. Bake for 35 to 40 minutes in the preheated oven, or until a toothpick comes out clean.

Very good and very easy. I added in an 8oz can of drained crushed pineapple and topped the bars with the allspice cream cheese frosting. A definite keeper.

This is a great recipe! It's easy to make. The spicy flavor is great. The sugar can definitely be reduced, it's quite sweet as is. Very good.

I also found no mention of the 3 Tbs butter so I put it in the pot to boil as well. I used golden raisins which add a nice juicy addition. I also made a quick cream cheese frosting to top them...
