This was delicious! Made it as directed! It was quite spicy for our tastes so added a dollop of sour cream before serving and it was perfect! Will be making this again and again on our meatless nights!
Made this last night and it was a huge hit with my husband and I. The only thing I omitted was the red bell pepper because my husband does not care for it. The flavors were great and the chicken was moist and tender. I topped ours with a pinch more of cilantro and some fresh cut tomatoes. I will definitely be making this again.
My husband and 2 boys loved this. I cut the recipe in half - more than enough for the four of us - and served it with corn tortillas. It's a keeper!
Wonderful recipe! We omitted the cayenne pepper and the pinto beans. Be sure to use a large pan, you will definitely need it!!!
I used boneless pork chops instead of chicken, and cooked these cubed on the side so as to not overcook the meat in the rice mixture. I also omitted the onion and used a green pepper in its place. It needed a little adjusting with seasoning, but otherwise was yummy and healthy!
I substituted fresh anaheim peppers for the green peppers and deleted the canned jalepenos. I also melted pepperjack cheese on the top, and sprinkled with more cilantro. Served with sour cream.

Delicious! My family loved it. The one change I made was I didn’t add corn because I cannot eat it. It had a great flavor. I can see why some reviewers thought it was bland, but I thought it was a nice taste The rice could have been a touch softer, but I didn’t want to cook it more because I didn’t want to over cook the chicken. Next time, I may par cook the rice before adding. Some family added hot sauce to add some kick. This is a keeper.
