Directions

  • Pour the sesame oil into a 9x13 inch baking dish, or any dish large enough to hold your chicken in a single layer. Mix in the garlic and red onion. Lay the chicken breast halves in the dish, and turn to coat. Cover and refrigerate for 3 to 4 hours.

  • Preheat the oven to 350 degrees F (175 degrees C). Uncover the chicken in the dish, and top with sliced zucchini. Season with salt and pepper.

  • Bake uncovered for 1 hour and 30 minutes in the preheated oven. Sprinkle the cheese over the top of the chicken during the last 15 minutes of baking.

Sounded wonderful smelled wonderful looked wonderful but missed my tastebuds altogether. I keep thinking I must have done something wrong but it's a straightforward recipe so I don't know what happened. If I had made it in my baking stone it would have at least been juicy...At least it used up some of my summer zucchini! Read More

This has the potential to be good but I think there's a few things off with the recipe. I think 1/2 cup sesame oil and 1 cup of parmesan is a bit much. So I'd scale the oil down to a few tablespoons and the parmesan to taste. Also 1 hour 30 minutes of cook time for boneless skinless chicken breasts is way too long. Depending on the size of your chicken breasts I'd start checking them after 25 minutes. Also "marinating" the chicken breasts isn't necessary. I simply put the oil and seasonings on right before I threw them in the oven. Lastly the recipe never states when to add the parsley so I assume it's at the end for a garnish. Overall I think this needs a little bit more spice maybe different herbs and a little clarity with the instructions. But with adjustments it tasted really good.
