Sarah's Pasta Salad

"This is something I threw together one day. Prepare the veggies while the pasta cooks and you're done in 10 minutes. I use different kinds of tomatoes, depending on what I have on hand. Cherry or grape tomatoes are easy to just throw in - no cutting required."

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, until al dente. Drain, and rinse under cold running water to cool.
  2. In a bowl, gently toss together pasta, avocado, tomato, dressing, and bacon. Chill until ready to serve.

I was loving the idea of this salad. It wasn't as good as I had hoped though.

I followed the recipe exactly... and it was just off. My husband and I even tried it the next day with more dressing... no go. Just no flavor. Very dry.

So easy, and pretty good. You could easily add lettuce (or basil--one of my favorite herbs!) and make this into a BLT pasta salad. I'd serve this immediately unless you want to keep adding ran...
