Add garlic and sauté until softened and fragrant, about 1 minute. Add radish slices and sauté to bring out their sweetness, 1 to 2 minutes. Add greens and sauté until wilted, 1 to 2 minutes. Remove from the heat and stir in feta cheese. Cook's Notes: You can substitute sweet onion or shallots for the garlic. Choose a large bunch of radishes to have enough greens for 2 servings. Editor's Note: Wash beet greens the same way you would collard greens: Cut the roots off. Fill a large bowl with cold water and submerge the greens. Swirl them around so that the grit frees itself. Use a colander to drain the dirty water. Repeat the process until the water stays clean.
