Ingredients

  • nonstick cooking spray

  • 1 pound lean ground chicken

  • cup dry bread crumbs

  • ¼ cup grated Parmesan cheese

  • ¼ cup finely chopped onion, or more to taste

  • 1 large egg, lightly beaten

  • 2 teaspoons minced garlic

  • ½ teaspoon dried basil

  • ½ teaspoon dried thyme

  • ½ teaspoon dried oregano

  • ¼ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 1 pinch chipotle chile powder

  • ¼ cup marinara sauce, or more to taste

  • ¼ cup shredded Italian cheese blend

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x4-inch loaf pan with nonstick spray.

  2. Mix together ground chicken, bread crumbs, Parmesan cheese, onion, egg, garlic, basil, thyme, oregano, salt, black pepper, and chipotle chile powder until well combined. Press into the prepared loaf pan and top with marinara sauce.

  3. Bake in the preheated oven until no longer pink in the center, 40 to 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

  4. Sprinkle Italian cheese over top and bake until melted and bubbly, about 10 more minutes.

  5. Let stand 5 minutes before serving.

Cook's Note:

You can use quick oats instead of bread crumbs.
